Happy Eating!

Every time I make this, people ask for the recipe, and it's SO easy... it's barely a recipe. I decided to share.I call it simple Mediterranean pitas (or tacos)I use shredded chicken prepared in the crockpot.
- put 2-3 chicken breasts in crockpot, with about 1 & 1/2 cans diced tomato
- lots of fresh chopped garlic. Our standard is that there should never be less than 10 cloves in anything. Even if it only calls for 3.
-seasoning - like basil, thyme, oregano, salt/pepper-half lemon juiced-optional; artichoke hearts & black olives

so let it cook a few hours until you can shred it.

Then i just butter and garlic salt pitas, put in oven or on grill for a few minutes,
then spread hummus on it, chicken mixture, feta, (optional rice), and I usually do either thinly sliced red/yellow bell pepper, or lettuce.

It's good stuff. And easy to make for a crowd.
You can also do the mexican taco version very easily, by doing the same chicken steps but using taco mix instead of the other seasonings. {thanks to Carrie for that one} :) excellent in tacos, enchilladas, or on salad.
